December 2022--Week 4 Meals

  Day 1: Christmas Day!!!  We had the a huge family meal at our house on Christmas Day!  Baked ham, baked beans, mac and cheese...all the fixings!!!  I hope you and your family had a great Christmas!  I know we did!! Cookies for Santa! Leaving their glitter dust so Santa can find the house! Opening presents Christmas morning! Day 2: Lasagna Soup with Breadsticks  It was still really cold in NC the day after Christmas, so what's better than a soup on a cold day?  I tried my hand at the lasagna soup recipe and my family gave this a 4 out of 5!  One thing we noted, we would probably add a little more broth, as the noodles sucked up the juice and it was less of a soup.  This recipe also calls for hot sausage...if you aren't a hot sausage person, this may be a little too spicy.  We are probably going to use mild next time we make it!  Lasagna is one of my favorite Italian meals, so this was a good spin on it! https://barefeetinthekitchen.com/lasagna-soup/ Day 3: Crockpot Swiss Steak

December 2022--Week 3 Meals

  We are rounding out week 3 of meals, I hope you are enjoying the recipes! Night 1: Garner Family Christmas!  My cousins and I treated our aunts and uncles to a Taco Bar for Christmas this year!  Needless to say, we didn't need anything else after this amazing lunch! My cousins that were able to attend the family gathering!  I'm the second youngest of the group, but my youngest cousin wasn't able to make it.  He was rocking out the band world that weekend! All of the cousins with our amazing spouses! My little family :) My Aunts and Uncles!  They have done so much for us over the years, it was nice to let them relax for a meal and treat them! December 2022--Week 2 Meals

Hello again!  Are you ready for Week 2 of meals? Night 1: A family favorite!  Steak, Baked Potatoes, Baked Beans and Crescent Rolls! There is no recipe for this!  My husband loves ribeye steaks, the more fat the better he says LOL.  I make the baked beans the way my mama made them.  A can of Bush's Baked Beans with brown sugar, molasses, ketchup, and Worcestershire sauce, pop in the oven (uncovered) for about 30 minutes at 350*.  They are SOOO good!   Night 2: Brooklyn and I had our Little League Cheer Christmas Party, so we had lots of food from the cheer moms!  Scott, Kaitlin and William hit up Bojangles.  Kaitlin had a game and William had basketball practice!  Divide and conquer night for sure! Night 3: Homemade Pizza rolls with Salad I wasn't home for this meal because I had a Board Meeting at work, so Scott made this one.  If I had of prepared better, this is one that you can make ahead, freeze and take out what you want to cook, but I didn't have time.  Something tha

December 2022--Week 1 Meals

  Week one of meals started December 4th!  I didn't take pictures of the meals, I'll do that in January, but I will post the links to the recipes for everyone! Night 1: Slow Cook Poor Man's Stew!  This was delicious!  One thing I'm really bad for, is taking out the ingredients that I don't like (onion, green peppers, etc.) but this challenge, I told myself I would make the dishes true to form!  This made a lot of food, I was able to give some to my parents.  My parents essentially live in front of us, my mom is always asking us "what's for dinner" (I'm telling you, my husband is an amazing cook!).  So anytime we have something left over, we make sure we give them some.  December in North Carolina has been really cold, so a stew on a cold Sunday was perfect!  Anything I can throw in the crockpot and forget, is my kind of meal!  This was a keeper in my family!   https://100krecipes.com/slow-cooker-poor-mans-stew/  Night 2: Crock Pot Chicken Pot Pie w

Welcome Back--Meal Prepping!!!

Wow, it's been YEARS!  So, what have I been up to since my last post...we added an addition to our family, Emily Brooklyn--she is now 6 years old and in the 1st grade!  She is following in her sisters footsteps and is a Princeton Little League Cheerleader.  She is very expressive, has some pretty good zingers at times, and is spoiled rotten!!!!  William is 9 years old and in the 4th grade!  He is so smart, it amazes me how much he can hold in his little brain.  He loves playing baseball and basketball; but is also into gaming!  Kaitlin, our oldest, is now 12--I can't even believe it!  She is the 6th grade and is a Middle School Cheerleader!!!  We could not be more proud of her accomplishments! Kaitlin isn't big on me taking pictures anymore...this is here at the last basketball game, I caught her by surprise :) This is from this summer, William made the All-Stars team for Princeton!  He loves baseball! Today I thought of you...

Today I thought of you...were you sitting beside me in the car as I drove down 95 Hwy on the way to work?  I was singing and then you hit me like a ton of bricks, I even think I heard you talking for a minute.  Has it really been 20 years since you left us??  I think about all the things that I miss about you...your constant worrying (I actually miss that).  I miss your cooking...your deviled eggs (which I have mastered); your Strawberry Jam (that Mrs. Linda can make and it tastes just like yours, but it is still not the same); your Chocolate Pies (again, Mrs. Phyllis can make it and it taste just like yours, yet still, it is not the same).  I miss those summer days that we would just sit in the afternoons...I would watch TV and you would watch me.  I was so young then, and thought I had all the time in the world with you...I really should have just talked more with you. I also think about all the things you have missed.  I graduated High School, then College.  You missed Dad walking

Childhood Favorite

So today on this cold and rainy day the kids are sleeping and I am making one of my childhood favorites Peanut Brittle. I remember around this time of year growing up I could go to my Grandmother's house and get this yummy treat. Last year I pulled out the old recipe and tried my hand at it and did pretty well at making it :). Like my cupcakes, this is a new request from people that I work with as well as my family. Hope it turns out yummy today!
